Grilled Vegetable Po'boys Recipe

Ingredients
  • 3 tbsps mayonnaise .
  • 4 (6 oz) French rolls (or po' boy loaves) .
  • 1 1/2 tsps garlic, sliced .
  • 1/2 c roasted garlic .
  • For marinade .
  • 1/2 tsp fresh rosemary, sliced .
  • To assemble sandwiches .
  • 8 oz bell peppers (red or green) .
  • 6 oz Fontina cheese .
  • sliced tomatoes .
  • For vegetables .
  • For the spread .
  • 1 1/2 tbsps rice wine vinegar .
  • 8 oz zucchini, sliced 1/4 inch thick .
  • lettuce, cut into thin strips .
  • 1/4 tsp salt .
  • 1/4 tsp pepper .
  • 1/2 tsp salt .
  • 1/3 c vegetable oil .
  • 8 oz Japanese eggplants, half peeled (stiped) .
  • 8 oz red onions, sliced 1/2 inch thick .

Directions
  • Step #1 Combine marinade ingredients in a mixer & puree.
  • Step #2 Set aside.
  • Step #3 In a mixer mix spread ingredients & puree.
  • Step #4 Set aside.
  • Step #5 In a marinating dish mix vegetables & marinade, toss to cover.
  • Step #6 Marinate 20 mins while preparing grill.
  • Step #7 Grill vegetables over hot coals until tender, turning often.
  • Step #8 DO NOT CHAR.
  • Step #9 Peel & slice the pepper.
  • Step #10 To asemble, spread po' boy loaves with spread & add tomatoes & lettuce.
  • Step #11 Lay the vegetables (eggplant, roasted pepper, onions, zuccini, & onion) & the cheese on top.
  • Step #12 Top with dressed top bread & slice in half.
