Crusted Honey Mustard Chicken Recipe

Ingredients
  • 1 lb boneless skinless chicken breasts, uncooked (four 4 oz pieces) .
  • 1 medium scallion, finely sliced .
  • 2/3 c light honey Dijon salad dressing .
  • 1/8 tsp salt .
  • 2 tsps dill, freshly sliced .
  • 1 c cornflake crumbs (we use bran) .
  • 1/8 tsp black pepper

Directions
  • Step #1 Preheat oven to 425°F degrees.
  • Step #2 In a small bowl, mix honey mustard dressing, salt, dill, pepper, & scallions.
  • Step #3 Remove 1/3 c & set aside.
  • Step #4 Place corn flake crumbs in a shallow bowl.
  • Step #5 Dip chicken breast in dressing mixture, & then in corn flake crumbs.
  • Step #6 Place in a shallow baking pan coated in cooking spray.
  • Step #7 Bake until chicken is golden brown & no longer pink, about 15-20 mins.
  • Step #8 Drizzle remaining dressing mixture (the 1/3 c that was set aside) over chicken breasts & serve.
