Fusilli With Asparagus Basil And Balsamic Glaze Recipe

Ingredients
  • 1 tbsp salt .
  • 1 c grated romano cheese .
  • 1 tbsp lemon juice .
  • 1 medium red onion, halved & sliced (1 1/2c) .
  • 5 tbsps extra virgin olive oil .
  • 1 c sliced fresh basil leaves .
  • 1 lb asparagus .
  • 1/4 tsp red pepper flakes .
  • 1/2 tsp pepper .
  • 3/4 c balsamic vinegar .
  • 1/2 tsp salt

Directions
  • Step #1 Bring 4 qt water to boil adding salt & pasta.
  • Step #2 Cook al dente.
  • Step #3 Drain & return to pot.
  • Step #4 Right before putting pasta in boiling water bring balsamic vinegar to boil in 8 in skillet over med heat.
  • Step #5 Reduce heat to medium & let simmer slowly until syrupy & reduced to 1/4 c 15-20 mins.
  • Step #6 While pasta is cooking & balsamic is reducing heat 2 Tbl oil in 12 in skillet over high heat until beginning to smoke.
  • Step #7 Cut asparagus in 1 in lengths discarding the bottom 1 inch.
  • Step #8 Add asparagus onion black & red pepper 1/2 tsp salt & stir this to mix.
  • Step #9 Cook without stiring until asparagus begins to brown about 1 min then stir & continue cooking.
  • Step #10 Stir every once in awhile until asparagus is tender-crisp about 4 min longer.
  • Step #11 Add asparagus, basil, lemon juice, 1/2 Romano,and remaining 3 Tbl oil to pasta in stockpot toss to mix.
  • Step #12 Serve as soon as possible, drizzling 1-2 tsp balsamic glaze over individual servings & sprinkle cheese accordingly.
