Easy Italian Tomato Zucchini Recipe

Ingredients
  • 3 medium onions .
  • 1/3 c oil .
  • 1-2 tbsp tomato paste .
  • grated parmesan cheese, for sprinkling .
  • 1/4 c grated parmesan cheese .
  • 1 (28 oz) can tomatoes, slightly drained .
  • 2-3 fresh minced garlic cloves (or to taste) .
  • salt & pepper .
  • 1 tbsp wine vinegar .
  • 2 tsps oregano .
  • 7-8 medium zucchini, sliced with skin on .
  • 3 tbsps butter

Directions
  • Step #1 Set oven to 375 degrees.
  • Step #2 Butter a 3-quart casserole dish.
  • Step #3 Place the sliced zucchini evenly in the bottom of the buttered baking dish.
  • Step #4 Sprinkle top about 1/4 c Parmesan cheese over the zucchini.
  • Step #5 In a frypan, saute onions & garlic in oil & butter until just lightly browned & tender.
  • Step #6 Add in tomatoes, salt, pepper, oregano & vinegar; heat until boiling, tomato paste, reduce heat & let simmer for about 25 mins.
  • Step #7 Pour the tomato mixture over the zucchini.
  • Step #8 Sprinkle top with more grated parmesan cheese.
  • Step #9 Bake for about 30 mins.
  • Step #10 *NOTE* 2 c grated mozzeralla chese may be sprinkled on top the last 10 mins of baking.
