Corn And Crab Fritters Recipe

Ingredients
  • 1/4 tsp pepper .
  • 3/4 c all-purpose flour .
  • 2 tbsps minced shallots .
  • 2 green onions, sliced .
  • 1 tsp baking powder .
  • 1/2 lb fresh lump crabmeat .
  • 1 tbsp butter or margarine .
  • 1 tsp salt .
  • 2 jalapeno peppers, seeded & minced .
  • 1/8 tsp ground red pepper .
  • vegetable oil .
  • 2 c frozen whole kernel corn, thawed .
  • 3 garlic cloves, minced .
  • 2 large eggs, separated .
  • 1 tbsp sugar .
  • 3/4 c buttermilk

Directions
  • Step #1 Melt butter In a large-ish skillet; add vegetables, & sauté 5 mins.
  • Step #2 Combine flour & next 5 ingredients In a large-ish bowl.
  • Step #3 Lightly beat egg yolks; add buttermilk to egg yolks.
  • Step #4 Stir sauteed vegetables & buttermilk mixture into flour mixture.
  • Step #5 Fold in crabmeat.
  • Step #6 Beat egg whites at high speed until soft peaks form.
  • Step #7 Gently fold half of beaten egg white into crabmeat batter.
  • Step #8 Fold in remaining beaten egg white.
  • Step #9 Heat 2" oil to 375º.
  • Step #10 Shape 2 tbsps batter into a fritter shape & drop into hot oil 4 or 5 at a time.
  • Step #11 Cook 3 mins or until golden on all sides, turning once.
  • Step #12 Drain on paper towels.
  • Step #13 Serve with Spicy Dipping Sauce.
