12 large about 2 1/2 lbs ripe tomatoes (Romas work best) .
salt .
seasoning salt (optional)
Directions
Step #1 Rinse the tomatoes.
Step #2 Cut them in half lengthwise & scoop out the seeds & centers with a small spoon.
Step #3 Place the tomato halves, cut side down, on a plate large enough to hold them in 1 uncrowded layer.
Step #4 Microwave, uncovered, on HIGH for 15 mins.
Step #5 Pour off any excess liquid.
Step #6 With a spatula, carefully turn the tomatoes over, patting the pulp back into the skins as you turn.
Step #7 Microwave, uncovered, depending on the size of the tomatoes, on HIGH for 10-15 mins more, or until they have completely collapsed & are dried out but still supple.
Step #8 Remove from the microwave & let this stand 30 mins without disturbing.
Step #9 Lift the tomatoes off the plate & use right away or store this in a loosely sealed plastic bag in the refrigerator.
Step #10 After 2 days, seal tightly & return the bag to the refrigerator.
Step #11 The dried tomatoes will keep indefinitely.
Step #12 Note: Don't worry if the tomatoes seem collapsed beyond hope after the first 15 mins.
Step #13 When they dry out more & cool off, their shape returns.
