Bruschetta Mushrooms Recipe

Ingredients
  • 1/4 c mozzarella cheese, shredded .
  • 3 leaves fresh basil, minced .
  • pepper .
  • 8-10 mushroom caps, with stems removed .
  • 1 tbsp balsamic vinegar .
  • salt .
  • italian seasoning .
  • 1-2 plum tomato, sliced .
  • gorgonzola (qty will depend on the size of your mushrooms) .
  • 1 crushed garlic clove

Directions
  • Step #1 Spray pan with non-stick spray.
  • Step #2 Arrange mushroom caps in pan, season to taste with salt, pepper & Italian Spice uping.
  • Step #3 Break Gorgonzolla into pieces that will fill the mushroom caps - plop the Gorgonzolla into the hole left from the stem.
  • Step #4 Combine tomatoes, garlic & balsamic, basil, season to taste if desired.
  • Step #5 Spread tomato mixture over mushrooms stuffed with cheese.
  • Step #6 Sprinkle top with mozzerella.
  • Step #7 Bake at 350 until mushrooms are cooked through & cheese is melted.
  • Step #8 If you like browned cheese (YUM) hit it with the broiler for a few mins.
