Pavlova Roll Recipe

Ingredients
  • 2 tbsps boiling water .
  • 1/2 c sugar .
  • Filling .
  • 1 lemon, juice & zest of (about 3 tbsps) .
  • 1 tsp real vanilla essence .
  • 1 tsp white vinegar .
  • 1 tbsp brown sugar .
  • 1 tbsp coconut .
  • 1 c whipped cream .
  • 4 egg whites .
  • 1 1/2 c sugar .
  • 4 egg yolks

Directions
  • Step #1 To make the pavlova: Beat the egg whites until soft peaks, then slowly add the sugar.
  • Step #2 When stiff, add the vanilla essence, white vinegar & boiling water.
  • Step #3 Spread the mixture about 2cm (3/4 inch) thick in the shape of a rectangle onto a foil wrap-lined baking sheet.
  • Step #4 Sprinkle top with a mixture of brown sugar & coconut & bake for 10 - 15 mins at 150C/300Fgas 1-2.
  • Step #5 Cool & turn out onto a clean tea towel.
  • Step #6 To make the filling: beat the egg yolks lightly & add the sugar, lemon rind & juice.
  • Step #7 Microwave on medium until thick - check & stir at 30 second intervals.
  • Step #8 Cool & mix with the cream.
  • Step #9 Spread over the pavlova & roll up, using the tea towel to help.
