Step #1 Heat oil in a 12 to 14 inch grying pan over med-heat/flame.
Step #2 Add your Canadian bacon & chicken, cook stiring often until browned on all sides, this takes about 6 mins Then transfer the meat using a slotted spoon into a casserole pan (4-5 quart).
Step #3 Next add onion, bell peppers, & celery to hot frying pan, garlic, cook this untill onions are soft (about 10 mins.
Step #4 )Add tomatoes, tomato sauce, white pepper, & parsley; cook, cayenne, thyme, stirring every once in awhile, bay leaves, until sauce boils.
Step #5 Boil gentle, uncovered for 5 mins
Finally pour the sauce over meats, stir in the rice & broth.
Step #6 Cover up & bake this at 375 oven until rice is tender to bite (about 45 mins).
