Ahi Tuna Salad
Ingredients
olive oil, for brushing on the fish .
6 (6 oz) sushi-grade tuna steaks, about 1-inch in thickness .
1/4 c shallots, minced fine .
salt & pepper .
2 tbsps white wine vinegar .
12 oz white wine, open a good bottle, reserve the remainder for dinner .
1 tbsp low sodium soy sauce .
1-3 tbsp wasabi powder, according to taste .
1/4 c unsalted butter, cubed
Directions
Step #1 In a small saucepan, mix the wine, over med-heat/flame, vinegar & shallots.
Step #2 Simmer until reduced to about 2 T.
Step #3 of liquid.
Step #4 Strain through a fine-mesh strainer, return the liquid to the pan, discard the shallots.
Step #5 Whisk in the wasabi & soy sauce.
Step #6 Over low heat, on piece at a time, slowly whisk in the butter, allowing the mixture to emulify.
Step #7 Do not let the mixture boil.
Step #8 When all the butter has been mixed in, remove this from heat, pour this into a small bowl & set aside.
Step #9 Brush the tuna steaks with a little oil.
Step #10 Either pan sear or BBQ to desired doneness.
Step #11 3 mins per side will leave a rare center.
Step #12 5 mins per side will be "pink".
Step #13 Watch closely, though.
Step #14 Serve with the sauce.
