Vegetable Stock Recipe

Ingredients
  • 1 bay leaf .
  • peppercorns .
  • vegetable peels, well-washed, enough to fill a large stockpot (10-litre) .
  • 2 liters water, enough to cover the vegetables

Directions
  • Step #1 Place the vegetables in the stockpot, covered, add 2 litres of water, & let simmer, a bay leaf & some peppercorns, over a low heat for 1-2 hrs.
  • Step #2 Strain & freeze in small portions (about 1 c/8 fluid oz).
  • Step #3 If you run out of stock, miso paste or Vegemite, use water, & add a tspful of soy sauce, & a bayleaf.
