Chinese Almond Cakes Recipe

Ingredients
  • 3/4 c white sugar
  • 1 egg yolk
  • 2 1/2 c sifted all-purpose flour
  • 36 blanched almonds
  • 1/4 tsp salt
  • 3 tbsps water
  • 1 tsp almond extract
  • 1 tsp baking powder
  • 3/4 c butter, softened
  • 1 egg

Directions
  • Step #1 Sift flour, sugar, salt & baking powder together in a large bowl.
  • Step #2 Using pastry mixer or knives, cut in butter until mixture resembles coarse cornmeal.
  • Step #3 Beat the egg together with 2 tbsps of the water & the almond extract.
  • Step #4 Add this to the flour mixture & mix with a fork until dough leaves the sides of the bowl.
  • Step #5 On a lightly floured surface, knead the dough until it is smooth.
  • Step #6 Wrap it in foil or cling-wrap & put in the fridge for one hr.
  • Step #7 Meanwhile, preheat your trusty oven to 350 degrees F (175 degrees C).
  • Step #8 Form dough into 1 inch balls & place them 3 inch apart on ungreased cookie sheets.
  • Step #9 Flatten each cookie to about 1/4 inch thick & press an almond into the center of each.
  • Step #10 Beat egg yolk with 1 tbsp water & brush on cookies.
  • Step #11 Bake 20-25 mins or until golden brown.
  • Step #12 Remove to wire rack to cool.
