Cranberry-lime Curd Recipe

Ingredients
  • 4 eggs .
  • 1/2 c butter, softened (no substitutes) .
  • 2 c whole berry cranberry sauce or 1 (16 oz) can cranberry sauce .
  • 1/2 c fresh lime juice (about 4 medium limes) .
  • 2 tsps grated lime zest .
  • 1/2 c sugar

Directions
  • Step #1 Puree all the ingredients in a food processor/blender until smooth.
  • Step #2 Pour the mixture into a double boiler over hot, NOT BOILING, water.
  • Step #3 Stirring constantly, smooth, cook this until the mixture is thick, & shiny.
  • Step #4 This should take about 20 mins.
  • Step #5 Do not overcook.
  • Step #6 Ladle into hot, sterilized jars, leaving 1/2 inch headspace.
  • Step #7 Wipe jar rims clean, add lids, & tighten rings just until closed.
  • Step #8 Process in a PRESSURE CANNER at 10 POUNDS PRESSURE for 10 mins.
  • Step #9 Adjust for altitude, if necessary.
  • Step #10 Store in the refrigerator; use within 3 months.
