Grilled Meatballs In Yoghurt Sauce —kujtah Lataniyyah Recipe

Ingredients
  • 3 tomatoes .
  • 450 g yogurt .
  • Sauce .
  • 2 tbsps meat broth or bouillon .
  • Kuftah .
  • 1 tsp black pepper .
  • 1 tbsp butter .
  • 1 tsp salt .
  • 2 large onions .
  • 2 lbs lean lamb .
  • 2 tbsps milk .
  • 1 tsp cumin .
  • 3/4 c minced flat leaf parsley ("Italian") .
  • 2 rounds day-old arab bread .
  • 1 tsp thyme .
  • bell peppers, tomato, parsley

Directions
  • Step #1 Put the meat, onion & parsley through the meat grinder, add the milk & spices & mix well by hand.
  • Step #2 Form into walnut-sized meatballs, flatten them slightly & grill them - preferably over charcoal.
  • Step #3 Peel, seed & chop the tomatoes, cook them to a sauce in butter.
  • Step #4 Toast the bread, break or cut it into small pieces, & put it in the bottom of a warmed dish.
  • Step #5 Spoon the tomato sauce & meat broth over the bread.
  • Step #6 Beat the yogurt & pour it over the bread, then arrange the meatballs on the bed of yogurt.
  • Step #7 Garnish with slices of tomato, pepper pieces & more sliced parsley.
