Five-lentil Stew (panch Dal) Recipe

Ingredients
  • 1 tsp salt (to taste) .
  • 1/2 tsp turmeric .
  • 1/4 c masoor dal .
  • 1/4 c channa dal .
  • 1 tsp garam masala .
  • 1 tbsp oil or ghee .
  • 1/4 c mung dal .
  • 2 large tomatoes, sliced .
  • 1/4 c toor dal .
  • 1 tsp cumin seeds .
  • SPICE BLEND .
  • 1 large onion, sliced, finely .
  • 5 c water .
  • 1/2 tsp cayenne pepper .
  • 1 tbsp garlic cloves, crushed .
  • 1/4 c Urad Dal

Directions
  • Step #1 Rinse dals.
  • Step #2 Bring water to boil in large pot.
  • Step #3 Add dals, stir, & bring back to boil.
  • Step #4 Remove from heat, cover, & let sit 2 hrs.
  • Step #5 Add turmeric & cayenne to dal & bring water to boil.
  • Step #6 Reduce heat slightly & let simmer until dal is tender, approximately 35 mins.
  • Step #7 10-15 mins before dal is ready, begin cooking spice mixture.
  • Step #8 Heat oil in heavy skillet or saucepan over medium-high heat.
  • Step #9 When hot, add onion & garlic & fry 2-3 mins, stirring frequently.
  • Step #10 Add cumin & garam masala & cook another min.
  • Step #11 Add tomatoes & salt & cook this until tomatoes have been reduced, approximately 10 mins.
  • Step #12 Add onion mixture to dal & stir well.
  • Step #13 Cook 2-3 mins more to mix flavors.
  • Step #14 Taste for salt & adjust seasoning.
  • Step #15 Serve hot in one large bowl or in individual-sized bowls with chapati or naan.
