Ingredients
2 large head of garlic .
6-8 pieces French bread, toasted & buttered .
2 c boiling water .
3 large egg yolks .
1/4 tsp dried thyme .
3 tbsps olive oil .
1/4 tsp sage .
2 large whole cloves .
1 tbsp salt .
1/4 tsp pepper .
2 quarts cold water .
1/2 c grated swiss cheese .
2 sprigs parsley .
4 tbsps melted butter
Directions
Step #1 Separate the garlic cloves & scald 1 min.
Step #2 Slip off & discard skins & scalding water.
Step #3 In a kettle over med-heat/flame, parsley, cloves, pepper, mix cold water, salt, garlic, & oil.
Step #4 Bring to a boil, reduce heat, cover, & simmer 30 mins.
Step #5 Remove from heat.
Step #6 With a slotted spoon, lift out the cloves, parsley, & garlic.
Step #7 Discard parsley & cloves.
Step #8 Puree the garlic with 2c of broth, in a mixer or food processor/blender, or press through a sieve.
Step #9 In a medium bowl beat the egg yolks until thick.
Step #10 Whip in the butter, then the garlic puree, then 1c broth.
Step #11 Whip this mixture into the kettle.
Step #12 Reheat to just below boiling, but do not boil.
Step #13 To serve: Place a piece of French bread, toasted & buttered in the bottom of each soup bowl & sprinkle generously with cheese.
Step #14 Ladle the soup over the bread.
Step #15 To make ahead: Complete through Step 3, then finish just before serving.
