Chicken And Peppers In Balsamic Vinegar Glaze Recipe

Ingredients
  • 2 tsps honey .
  • 2 garlic cloves .
  • 3 tbsps balsamic vinegar .
  • 1 small yellow bell pepper .
  • 2 tbsps butter or margarine .
  • 4 boneless skinless chicken breast halves (about 1 lb) .
  • salt & fresh ground pepper .
  • 1 small red bell pepper

Directions
  • Step #1 Pound chicken to 1/2" thickness.
  • Step #2 Sprinkle top with salt & pepper.
  • Step #3 Heat butter In a large-ish skillet, add chicken & cook over med-high heat until cooked through, 5 mins per side.
  • Step #4 Meanwhile, cut peppers lengthwise into thin strips.
  • Step #5 Mince garlic.
  • Step #6 Transfer chicken to a serving platter.
  • Step #7 Add peppers & garlic to skillet drippings, about 4 mins, & cook this until peppers are just tender, stirring frequently.
  • Step #8 Spoon peppers over chicken.
  • Step #9 Add vinegar & honey to skillet, stir with wooden spoon until reduced to a glaze, about 1 min.
  • Step #10 Spoon evenly over chicken & peppers.
