Citrus Gelatin Salad Recipe

Ingredients
  • 1/2 c sliced firm banana
  • 1/4 c cold water
  • 3 tbsps lemon juice
  • 1 1/2 c reduced-fat whipped topping
  • 1 (20 oz) can unsweetened pineapple tidbits, drained
  • 1/4 c lemon juice
  • 1 3/4 c boiling water
  • 3 tbsps cornstarch
  • 1 c sugar
  • TOPPING:
  • 1 1/2 c miniature marshmallows
  • 1/2 c sugar
  • 1 drop yellow food coloring
  • 2/3 c orange juice
  • 2 envelopes unflavored gelatin

Directions
  • Step #1 In a bowl, mix gelatin & cold water; let this stand for 1 min.
  • Step #2 Add sugar & boiling water; stir until sugar & gelatin are dissolved.
  • Step #3 Stir in lemon juice & food coloring if desired; set aside.
  • Step #4 Layer pineapple, banana & marshmallows in a 13-in.
  • Step #5 x 9-in.
  • Step #6 x 2-in.
  • Step #7 dish.
  • Step #8 Pour gelatin mixture over top.
  • Step #9 Cover & put in the fridge overnight.
  • Step #10 In a saucepan, mix sugar & cornstarch.
  • Step #11 Gradually stir in the juices until smooth.
  • Step #12 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #13 Remove from the heat; cool to about room temp.
  • Step #14 Transfer to a mixing bowl; add whipped topping.
  • Step #15 Beat until mixed.
  • Step #16 Spread over gelatin layer.
  • Step #17 Cover & chill for 1 hr or until serving.
  • Step #18 Cut into squares.
