Step #1 Line 12 muffin c with paper liners & preheat your trusty oven to 350°.
Step #2 Whisk the flour, baking powder, baking soda, & salt in a medium bowl to mix.
Step #3 Using an electric mixer, beat together 1 c sugar, butter, & lemon zest In a large-ish bowl until light & fluffy.
Step #4 Beat in the ricotta, lemon juice, then the egg, & almond extract.
Step #5 Add the dry ingredients & stir just until mixed (the batter will be thick & fluffy).
Step #6 Divide the batter among the prepared muffin c.
Step #7 Sprinkle top the almonds & then the remaining 1 tsp of sugar over the muffins.
Step #8 Bake until the muffins just become pale golden on top, about 20 mins.
Step #9 Cool slightly & serve warm.
