Lamb Skewers With Spicy Yogurt Dressing Recipe

Ingredients
  • 2 garlic cloves, minced .
  • Lamb Skewers .
  • 1 tbsp fresh mint, minced .
  • Spicy Yoghurt Dressing .
  • 2 medium onions, finely sliced .
  • 2 scallions, minced (white part only) .
  • 1 lb ground lamb .
  • 1/2 tsp cayenne pepper .
  • 1 tbsp olive oil .
  • 1 1/2 tsps salt .
  • salt & pepper, to taste .
  • 1 tbsp finely sliced fresh mint .
  • 2 c plain yogurt .
  • 1/2 tsp ground pepper

Directions
  • Step #1 The day before serving, heat the olive oil in a sauté pan over low heat/flame.
  • Step #2 Add the onions & cook slowly until translucent, about 30 mins.
  • Step #3 Drain any excess oil.
  • Step #4 Break the ground lamb up into a bowl.
  • Step #5 Add the onions, garlic, salt, mint, scallions, & pepper.
  • Step #6 Mix well.
  • Step #7 Cover up & put in the fridge overnight.
  • Step #8 When ready to serve, soak 16 six-inch wooden skewers in water for 30 mins.
  • Step #9 (This helps prevent the skewers from burning on the grill.
  • Step #10 ) Preheat a grill (high heat).
  • Step #11 Divide the lamb mixture into 16 equal pieces.
  • Step #12 Shape each piece into a 1-inch diameter log, approximately 3-inches long.
  • Step #13 Thread each piece lengthwise onto a skewer.
  • Step #14 Grill lamb to medium rare, turning once, about 5 mins.
  • Step #15 Serve with Spicy Yogurt Dressing.
  • Step #16 To make the dressing: Mix the yogurt, cayenne, & mint in a small bowl.
  • Step #17 Spice up to taste with salt & pepper.
  • Step #18 Serve at about room temp with the lamb skewers.
