Hungarian Goulash Casserole Recipe

Ingredients
  • 1 tsp sweet Hungarian paprika .
  • 1 tbsp cornstarch .
  • 1/4 tsp salt .
  • 1 tbsp olive oil .
  • 1 (10 3/4 oz) can cream of celery soup .
  • 1/4 tsp garlic powder .
  • 1 (10 oz) package egg noodles, cooked & drained .
  • 1/2 lb ground turkey or ground pork (I like half & half of each) .
  • 1 c 2% low-fat milk .
  • 1/4 tsp ground nutmeg .
  • 4 oz baby portabella mushrooms, sliced .
  • 1 c low-fat sour cream .
  • 1/4 tsp pepper

Directions
  • Step #1 Preheat oven to 325°F.
  • Step #2 Spray a 13"x9" casserole dish with nonstick cooking spray.
  • Step #3 Combine meat, nutmeg, salt, & pepper in a bowl; shape mixture into 1" meatballs.
  • Step #4 In a large skillet, heat oil over med-high heat.
  • Step #5 Cook meatballs & mushrooms in oil until meatballs are browned on all sides & no longer pink in the center (10 mins).
  • Step #6 Remove meatballs & mushrooms from skillet; discard drippings.
  • Step #7 In a small bowl, mix cornstarch into 1/4 c sour cream; spoon into the skillet the meatballs were cooked inches.
  • Step #8 Add remaining 3/4 c sour cream, mik, & paprika, garlic powder, soup, & stir until smooth.
  • Step #9 Place cooked noodles into casserole dish.
  • Step #10 Arrange meatballs on top of noodles & cover with sauce.
  • Step #11 Bake until hot (20 mins).
