Crispy Fish Fillets Recipe

Ingredients
  • 2 tbsps prepared yellow mustard
  • 1 1/2 c instant mashed potato flakes
  • 1/4 c oil for frying
  • 4 (6 oz) fillets sole
  • 1/2 tsp salt
  • 1 egg

Directions
  • Step #1 In a shallow dish, mustard, whisk together the egg, & salt; set aside.
  • Step #2 Place the potato flakes in another shallow dish.
  • Step #3 Heat oil in a large heavy skillet over medium-high heat.
  • Step #4 Dip fish fillets in the egg mixture.
  • Step #5 Dredge the fillets in the potato flakes, making sure to completely coat the fish.
  • Step #6 For extra crispy, dip into egg & potato flakes again.
  • Step #7 Fry fish fillets in oil for 3 to 4 mins on each side, or until golden brown.
