Buttermilk Pecan Chicken Recipe

Ingredients
  • 1 egg, lightly beaten .
  • 1 c buttermilk .
  • 1 c flour .
  • 1 c pecans, toasted, ground in mixer .
  • 6 boneless skinless chicken breasts .
  • 1 tbsp paprika .
  • 1/8 tsp pepper .
  • 1/2 tsp salt .
  • 1/3 c butter, melted

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Combine the flour, paprika, pecans, salt & pepper in a shallow dish.
  • Step #3 Combine the egg & buttermilk in a second shallow dish.
  • Step #4 Rinse the chicken breasts & pat dry with a paper towel.
  • Step #5 Place the chicken between sheets of wax paper & flatten with mallet.
  • Step #6 Dip the flattened breats into the buttermilk mixture & then dredge in the flour mixture.
  • Step #7 Pour the melted butter into a baking dish; add chicken, turning once to coat with butter.
  • Step #8 Place in oven proof dish & bake for 30 mins.
  • Step #9 Chicken should be golden brown, garnish with fresh parsley, thyme or sage.
