Vegan Zucchini Bannock Recipe

Ingredients
  • 1 tsp cinnamon .
  • 2 tsps salt .
  • 5 tbsps olive oil .
  • 1/4 lemon .
  • 4 c flour .
  • 3 medium zucchini .
  • 2 1/2 tbsps baking powder .
  • 1/2 tsp cloves .
  • 1/2 c raisins .
  • 1 egg substitute .
  • 1/4 c water .
  • 1/2 tsp allspice

Directions
  • Step #1 1.
  • Step #2 Puree zucchini with 1/4 c of water & juice of 1/4 lemon to make about 2.
  • Step #3 5 c.
  • Step #4 2.
  • Step #5 Mix dry & wet separately, mix dough, at some point you have to use your hands.
  • Step #6 Add water if it is too stiff.
  • Step #7 3.
  • Step #8 Oil the pan, & split dough in half.
  • Step #9 4.
  • Step #10 Roll each half long enough to go around the bundt pan, & then oil each of these.
  • Step #11 5.
  • Step #12 Press the first one into the ring nad fit together, then press the second oiled dough coil on top & press together.
  • Step #13 Push both down.
  • Step #14 6.
  • Step #15 Bake at 350 for a long time in a bundt cake pan.
  • Step #16 40 mins or until top is golden & crusted.
