Plum Salsa Ala Weight Watcher's Recipe

Ingredients
  • 1 c fresh cilantro .
  • 1 tbsp white wine vinegar .
  • 1 1/4 lbs ripe plums (quartered & pitted) .
  • 1/8 tsp ground cayenne pepper .
  • 3/4 c fresh mint .
  • 1/4 tsp pepper .
  • 1/2 tsp salt .
  • 1 small red onion, quartered

Directions
  • Step #1 Place plums & onion in a food processor/blender; pulse 10 times, scraping sides of bowl every once in awhile.
  • Step #2 Add cilantro & remaining ingredients; pulse five times or until mixture is sliced, taking care not to over-process or salsa will become mushy.
