Chinese New Year Whole Fish With Sweet And Sour Vegetables Recipe

Ingredients
  • 1 kg fish, cleaned & scaled .
  • 3 tbsps oyster sauce .
  • salt .
  • 2 tbsps sugar .
  • 3 spring onions, sliced .
  • 1 tbsp sesame oil .
  • vegetable oil .
  • 3 tbsps vinegar .
  • 3 tbsps light soy sauce .
  • 1 red capsicum, thinly sliced .
  • 1 carrot, thinly sliced .
  • 1 red chili, deseeded & finely sliced .
  • 1 tbsp shredded fresh ginger .
  • 2 tsps cornflour

Directions
  • Step #1 Score the fish flesh, cutting 3-4 diagonal slits through to the bone on both sides.
  • Step #2 Spice up with salt rubbing the salt into the cuts.
  • Step #3 Cook under a preheated grill 4 mins each side.
  • Step #4 Alternatively bbq it.
  • Step #5 Meanwhile heat a wok, add ginger, add a little oil, chilli & vegetables tossing well over high heat for 2-3 mins.
  • Step #6 Add soy & oyster sauces, sugar, vinegar & sesame oil & bring to the boil.
  • Step #7 In a bowl mix cornflour to a smooth paste with some cold water, add to the pan & let simmer until sauce thickens.
  • Step #8 Place fish on serving platter & spoon sauce & vegetables over the top.
