British Raspberry Oaties Recipe

Ingredients
  • 10 1/2 oz fresh raspberries (or frozen) .
  • 1 c rolled oats .
  • 1 c self-raising flour .
  • 1 c caster sugar .
  • 1 pinch salt .
  • 1 c butter, plus extra for greasing

Directions
  • Step #1 Grease a Swiss roll tin (jelly roll pan) & preheat the oven to 190C/375°F If using frozen raspberries, allow to defrost & drain.
  • Step #2 Mix the flour & salt & roughly rub in the butter.
  • Step #3 Stir the oats & sugar into the mixture & use your hands to mix (it will be a thick doughy mixture).
  • Step #4 Press half of the oat mixture into the prepared tin.
  • Step #5 Sprinkle top over the raspberries, squashing slightly if using fresh raspberries, to release the juice.
  • Step #6 Cover up with the remaining oat mixture then press down firmly.
  • Step #7 Bake for 20-25 mins until golden brown.
  • Step #8 Leave to cool for 10 mins then cut into squares.
