Spinach Stuffed Artichoke Bottoms Recipe

Ingredients
  • 1 c milk .
  • 6 artichoke bottoms .
  • 1/8 tsp ground black pepper .
  • 1/4 tsp salt .
  • Gratin Sauce .
  • 1 dash nutmeg .
  • 1 tbsp unsalted butter .
  • 1/4 tsp salt .
  • 1 tbsp flour .
  • 1 1/2 lbs spinach .
  • 2 tbsps unsalted butter .
  • 2 tbsps grated parmesan cheese .
  • Spinach sautee .
  • 1/3 c heavy cream .
  • 1/4 c grated swiss cheese

Directions
  • Step #1 Prepare artichokes or buy canned bottoms.
  • Step #2 To prepare remove stem & then break the leaves of the base.
  • Step #3 Artichoke should have a conical shape when done.
  • Step #4 Cut off the core of the artichoke above the base.
  • Step #5 Base should be trimmed with vegetable peeler until all of the fibrous material is removed.
  • Step #6 Place the core & bottom in lemon water.
  • Step #7 The choke will be removed after cooking.
  • Step #8 Arrange artichoke pieces in one layer in saucepan with little oil, water, lemon juice & a dash of salt.
  • Step #9 Cook for 20-25 mins covered.
  • Step #10 Once tender remove bottoms with spoon & pour cooking liquid over the bottoms.
  • Step #11 Spinach Sautee:.
  • Step #12 Cook in skillet with dash of salt 3-4 mins until wilted.
  • Step #13 Drain.
  • Step #14 Using a spoon, press spinach to extract water.
  • Step #15 Chop the spinach & sprinkle with salt & pepper.
  • Step #16 Heat butter in skillet until dark brown then add spinach.
  • Step #17 Sautee just until heated.
  • Step #18 Reheat the artichoke bottoms in their liquid & drain.
  • Step #19 Arrange them in a gratin dish & spoon spinach into each one.
  • Step #20 Press the Swiss cheese on top of spinach.
  • Step #21 Gratin Sauce:.
  • Step #22 Melt the butter in a heavy saucepan & add flour.
  • Step #23 Mix with whisk & cook on medium heat for 10 seconds.
  • Step #24 Add the milk all at once & mix with wisk.
  • Step #25 Add the salt, pepper, & nutmeg.
  • Step #26 Stir until sauce boils.
  • Step #27 Reduce heat & boil for 30 seconds.
  • Step #28 Add cream & remove this from heat.
  • Step #29 Preheat the broiler.
  • Step #30 Coat the artichokes with sauce & sprinkle with parmesan cheese.
  • Step #31 Heat under broiler for 3-4 mins or until browned.
