Southern Fried Catfish Recipe

Ingredients
  • vegetable oil (for frying) .
  • 1/4 c flour .
  • 6-10 catfish fillets (or 4 to 6 whole catfish, skinned) .
  • 1/2 c milk .
  • salt & pepper, to taste .
  • 2 eggs .
  • 1/2 c white cornmeal

Directions
  • Step #1 Heat oil in heavy skillet to 375 degrees F.
  • Step #2 Combine cornmeal & flour in a shallow bowl.
  • Step #3 In a separate bowl, beat eggs; add milk & mix well.
  • Step #4 Spice up the fish with salt & pepper.
  • Step #5 Dip fish in the egg mixture & coat with cornmeal mixture.
  • Step #6 Fry a few pieces of fish at a time in hot oil until golden brown on both sides.
  • Step #7 Drain on paper towels.
