Fiesta Chicken Pasta Salad Recipe

Ingredients
  • 1 (1 1/8 oz) package hidden valley fiesta ranch dip mix .
  • 1 c chicken broth .
  • 1 stalk celery, sliced .
  • 8 oz shredded cheese (I use Sargento's Mexican 4 Cheese Blend) .
  • 6 green onions, sliced .
  • 3 boneless skinless chicken breast halves .
  • vegetable oil cooking spray .
  • 1 c mayonnaise .
  • 1/2 green bell pepper, sliced .
  • 1 lb penne pasta .
  • 1 c sour cream

Directions
  • Step #1 Lightly brown chicken in pan sprayed with cooking spray.
  • Step #2 Add chicken broth & 1 tsp of Fiesta Dip mix.
  • Step #3 Bring to boil, cover, & let simmer for 30 mins.
  • Step #4 Remove chicken & set aside to cool, reserving broth in pan.
  • Step #5 Add broth to water for cooking pasta, & cook according to package directions.
  • Step #6 Drain & cool slightly.
  • Step #7 Cut chicken into small chunks & mix with pasta & vegetables in large bowl.
  • Step #8 Mix remaining Fiesta Dip mix with mayonnaise & sour cream & add to the pasta bowl, mixing to coat well.
  • Step #9 Gently stir in the shredded cheese, & put in the fridge at least 4 hrs before serving for flavors to mix.
