Pan-seared Rosemary Chicken With Shallots And Arugula (rocket) Recipe

Ingredients
  • 4 c organic arugula, washed with stems removed .
  • 2 shallots, slivered .
  • 3 c chicken stock .
  • 1 lemon .
  • extra virgin olive oil, as needed .
  • 2 chicken breasts .
  • sea salt .
  • 4 tbsps salted butter, cubed .
  • fresh ground pepper .
  • 2 tbsps rosemary, sliced

Directions
  • Step #1 Heat olive oil in a sauté pan.
  • Step #2 Spice up chicken breasts with salt, pepper & organic rosemary.
  • Step #3 Sear for 4 mins on high heat.
  • Step #4 Turn chicken over & add slivered shallots.
  • Step #5 Sauté shallots until golden, about 1 min.
  • Step #6 Remove chicken breasts from pan & add the juice of one lemon.
  • Step #7 Add chicken stock & reduce by 1/3.
  • Step #8 Add butter & arugula.
  • Step #9 Spice up with sea salt & fresh black pepper.
