Step #1 Soak pitted cherries overnight in heated brine.
Step #2 The next morning, drain cherries.
Step #3 Rinse them in cold water.
Step #4 Combine cherries, water, sugar, lemon juice, & red food coloring.
Step #5 Heat to the boiling point.
Step #6 Let stand about 24 hrs.
Step #7 Again, boil juices, pour over cherries & let this stand 24 hrs.
Step #8 Bring to boil again.
Step #9 Add almond extract & cherries.
Step #10 Pack in hot sterilized jars & seal.
Step #11 The Ball Blue bood says boil this in a water bath-pints-20 mins, quarts-25 mins.
