fruit juice (I used apple berry, but any kind would do) .
fresh parsley .
powdered ginger .
fresh basil .
1 lb pork tenderloins (other cuts would work as well) .
2 tbsps vegetable oil .
sugar .
garlic salt
Directions
Step #1 Pour vinegar & juice in equal amounts into shallow bowl--enough to cover tenderloin pieces.
Step #2 Add sugar & spices to taste.
Step #3 (I used about 1tbsp of each, remember it has to be pretty strong since it's a marinade)
Marinate meat for at least one hr.
Step #4 Heat oil in skillet on med heat, add onions, sautee about four mins.
Step #5 Add sliced mushrooms, brown.
Step #6 Raise heat, push onions & mushrooms to sides, add pork & sear each side.
Step #7 Add cantaloupe, reduce heat to med-low & cover.
Step #8 Simmer till pork is cooked through (I had really thick pieces & it took about twenty mins!), stirring every once in awhile to keep the other ingredients from sticking.
Step #9 TO make the dipping sauce, add about 1/2 c canteloupe pieces to marinade & let simmer about ten min
This meal is best with a light red wine like a Shiraz.
Step #10 We used a fruity white & it didn't have the body we wanted to compliment the ginger flavor.
