Spicy Black Bean Mussels Recipe

Ingredients
  • 2 c chicken stock, divided .
  • 2 tomatoes, sliced .
  • 1 tbsp fermented black beans .
  • 1 tbsp nam pla (fish sauce) .
  • 1 bunch chives, sliced .
  • 2 tbsps canola oil .
  • 1/2 c dry white wine .
  • 8 oz rice noodles, soaked in warm water for 30 mins .
  • 1 c Thai basil, chiffonaded .
  • 2 limes, halved .
  • 2 jalapeno chiles, sliced (or thai bird chiles) .
  • 2 tbsps butter .
  • salt, pepper to taste .
  • 1 tbsp sliced ginger .
  • 1 tbsp sliced garlic .
  • 2-3 lbs mussels, cleaned & debearded

Directions
  • Step #1 soak noodles in warm water while preparing the rest of the ingredients.
  • Step #2 heat oil In a large-ish wok or pot.
  • Step #3 add garlic, ginger, chiles & black beans & heat until softened, 2 mins.
  • Step #4 add wine & 1 c chicken stock.
  • Step #5 add mussels, cover & heat 5 mins until mussels open.
  • Step #6 add tomatoes, fish sauce, & remaining chicken stock.
  • Step #7 drain rice noodles & add to pot.
  • Step #8 add basil, chives & butter, stir well.
  • Step #9 season this with salt & pepper to taste.
  • Step #10 divide into 4 pasta bowls, squeeze a half lime over each serving.
