Better Than Grandma's Banana Bread Recipe

Ingredients
  • 1/2 tsp salt .
  • 6 tbsps melted butter .
  • 1/4 c plain yogurt or vanilla yogurt .
  • 1/4 c firmly packed brown sugar .
  • 3 large ripe bananas .
  • 1/2 c sugar .
  • 3/4 tsp baking soda .
  • 2 large eggs, beaten lightly .
  • 2 c all-purpose flour .
  • 1 tsp cinnamon .
  • 1/2 c granola cereal (i used coconut almond) .
  • 1 1/2 tsps vanilla extract

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Mix first six ingredients In a large-ish bowl.
  • Step #3 Melt butter & set aside to cool.
  • Step #4 If the bananas aren't overripe, slice & add to butter in a saucepan while it melts & the will soften & be easier to mash.
  • Step #5 Lightly beat 2 eggs in a medium size bowl & add the yogurt, vanilla, banana & butter & mix.
  • Step #6 Carefully fold banana mixture into the dry ingredients with a rubber spatula until mixture is mixd.
  • Step #7 do not overmix.
  • Step #8 Pour mixture into a greased 9x5x3 regular loaf pan or a greased & floured non-stick loaf pan.
  • Step #9 Bake at 350° for 55 mins or until toothpick comes away clean on lower middle oven rack.
  • Step #10 Cool for 10 min before moving to wire rack.
  • Step #11 Serve warm or at about room temp.
