Step #1 creole seasoning: mix all ingredients thoroughly.
Step #2 In a bowl, mix the shrimp, chicken & creole seasoning & use your hands to cover meat thoroughly with seasoning.
Step #3 Set aside in fridge for 15-30 mins.
Step #4 Heat the olive oil In a large-ish skillet (preferably an iron skillet, but any large, non-stick will work) over high heat for 1-3 mins (don’t let the oil smoke).
Step #5 Add the seasoned shrimp & chicken & stir-fry for 1-2 mins, (it’s best if you can evenly sear each side of the pieces in that fist min or two).
Step #6 Add the frozen vegetables & continue to stir fry for 1-2 more mins, letting the veggies absorb some of the spice in the pan.
Step #7 Stir in the tomatoes, Worcestershire, & chicken stock & bring to a boil.
Step #8 Cook for 10 mins, (this is a good time to pre-cook the couscous in the microwave, follow instructions on box).
Step #9 Stir in the couscous & serve as soon as possible.
