Black Bean And Spinach Burrito Recipe

Ingredients
  • 1/4 c black beans (canned, drained & rinsed) .
  • 1 tbsp grated low-fat cheddar cheese or mozzarella cheese .
  • 1 egg white .
  • 1 c baby spinach leaves (or any other green) .
  • 1 egg .
  • 1/4 c tomatoes, sliced .
  • 1 tbsp salsa .
  • 1 whole wheat tortilla

Directions
  • Step #1 Pre-heat the oven to 350 degrees.
  • Step #2 Mix the egg & egg white & scramble them quickly in a small frying pan.
  • Step #3 Fold in all the other ingredients.
  • Step #4 Place this mixture in the middle of the tortilla.
  • Step #5 Wrap the two sides over tightly & place the roll, seam side down, on a lightly oiled cookie sheet.
  • Step #6 Bake at 350 for about 6 mins until the tortilla is crisp & the filling is heated through.
  • Step #7 Serve with a green salad and/or tomatoes tossed in a light vinaigrette.
