Ingredients
salt & pepper .
2 lbs ground beef .
1 medium zucchini, sliced or 1 c frozen sliced zucchini .
1 green pepper, sliced .
1/4 tsp italian seasoning .
1 1/2 c water .
1 onion, sliced .
1 tbsp garlic, minced .
1 (14 1/2 oz) can sliced tomatoes, undrained .
1 (14 1/2 oz) can beef broth .
1 c cheddar cheese, shredded .
1 (6 oz) can tomato paste .
2 c pasta, uncooked (spiral or bow tie)
Directions
Step #1 Brown the meat In a large-ish skillet with the garlic & onion; drain.
Step #2 Return to skillet.
Step #3 Add the tomatoes with their liquid, the broth & the water; mix well.
Step #4 Bring to a boil.
Step #5 When boiling add to the pan the pasta, zucchini & sliced pepper; mix well.
Step #6 Cover up.
Step #7 Reduce the heat to medium; simmer 15 mins or until pasta is tender.
Step #8 Then stir in the tomato paste, Italian seasoning & salt & pepper to taste until well mixed.
Step #9 Sprinkle top with cheese & serve.
