One-pan Italian Pasta Recipe

Ingredients
  • salt & pepper .
  • 2 lbs ground beef .
  • 1 medium zucchini, sliced or 1 c frozen sliced zucchini .
  • 1 green pepper, sliced .
  • 1/4 tsp italian seasoning .
  • 1 1/2 c water .
  • 1 onion, sliced .
  • 1 tbsp garlic, minced .
  • 1 (14 1/2 oz) can sliced tomatoes, undrained .
  • 1 (14 1/2 oz) can beef broth .
  • 1 c cheddar cheese, shredded .
  • 1 (6 oz) can tomato paste .
  • 2 c pasta, uncooked (spiral or bow tie)

Directions
  • Step #1 Brown the meat In a large-ish skillet with the garlic & onion; drain.
  • Step #2 Return to skillet.
  • Step #3 Add the tomatoes with their liquid, the broth & the water; mix well.
  • Step #4 Bring to a boil.
  • Step #5 When boiling add to the pan the pasta, zucchini & sliced pepper; mix well.
  • Step #6 Cover up.
  • Step #7 Reduce the heat to medium; simmer 15 mins or until pasta is tender.
  • Step #8 Then stir in the tomato paste, Italian seasoning & salt & pepper to taste until well mixed.
  • Step #9 Sprinkle top with cheese & serve.
