Creamy Turkey & Rice Casserole (chicken, Too) Recipe

Ingredients
  • 1 tbsp olive oil (DIVIDED) .
  • 1-1 1/2 c cheddar cheese, grated .
  • 4-8 dashes hot sauce .
  • 1 lb ground turkey (or chicken) .
  • 1/4 c sherry wine or red wine .
  • 2-4 tbsps worcestershire sauce .
  • 1 (10 3/4 oz) can mushroom soup (use chicken if you don't like mushrooms) .
  • 1/4-1/2 c green bell peppers or red bell peppers, sliced .
  • 1/4-1/2 tsp ground pepper .
  • 1-2 tsp garlic, minced .
  • 1/2 c mayonnaise .
  • 3 c rice, prepared .
  • 1-2 tbsp dried parsley .
  • 1/2-1 c onions, Chopped .
  • 1 c sour cream

Directions
  • Step #1 Prepare rice as instructed on package.
  • Step #2 In skillet, brown turkey in 1/2 tbsp of olive oil, drizzling it evenly over turkey.
  • Step #3 Your meat shouldn't be chunky (small pieces).
  • Step #4 Place in large mixing bowl.
  • Step #5 In same skillet, add in the remaining Olive Oil, Sherry & saute Onion, Green Pepper, & Garlic until tender.
  • Step #6 In sm-medium bowl, Ground Pepper, Mayo, Parsley, mix together Sour Cream, Worstershire Sauce & Hot Sauce.
  • Step #7 Combine soup mixture into large bowl with meat mixture & mix well.
  • Step #8 Stir rice into meat mixture until covered well (don't overwork the rice - prevents mushy results).
  • Step #9 Spray Oil over an oblong casserole dish & pour mixture evenly into dish.
  • Step #10 Sprinkle top grated cheese evenly over top of mixture.
  • Step #11 Bake COVERED for 40-45 mins until bubbly.
  • Step #12 Before adding cheese, if you think your mixture looks a little dry, evenly pour 3-6 tbsps of cream or milk over the top.
  • Step #13 Fork a few tiny openings for cream to work its way down into casserole dish.
