1 tsp ground nutmeg (it sounds like alot but try it before you change the amount) .
3 medium eggs .
2 tsps granulated sugar .
2 tbsps butter (marg OK but butter is best)
Directions
Step #1 Turn oven on to 425'.
Step #2 Put butter in lrge (10 inch) ovenproof frypan (I use a 4 litre saute pan) & put the pan in the preheating oven.
Step #3 In medium mixing bowl, wisk together the eggs & milk.
Step #4 Sprinkle top in the sugar, nutmeg & flour.
Step #5 This means, just dump in the dry stuff.
Step #6 Wisk it all together until it is smooth.
Step #7 Remove hot pan from the oven, swirl the butter around & then dump in all the batter.
Step #8 No need to spread it or mess about, just pop it back into the hot oven uncovered, close the door & sit back with a cpa & wait.
Step #9 Set that timer for 16-18 mins.
Step #10 Remove from oven & slice into wedges, in my house that means half for me & half for my husband!
This is great served with warm maple syrup, from annieCANada of course.
Step #11 Now enjoy.
Step #12 If you are having a big breakfast & you actually have leftovers, rest assured that this pancake tastes great at about room temp, cold or reheated.
