Ingredients
1 1/2 c sliced parsley .
1/4 c olive oil .
salt & pepper, to taste .
5-6 tbsps chives, coarsley sliced .
1/2 c fish stock or water .
1/2 tsp chili pepper flakes .
3/4 c crumbled feta cheese .
2-3 tbsps lemon juice .
1 tsp Dijon mustard .
1 lb shrimp, peeled & deveined .
1 c dry white wine
Directions
Step #1 In a deep skillet, heat the olive oil & saute the chives for 2 mins.
Step #2 Add the mussels or shrimps, & cook for 1 min.
Step #3 Pour in the wine, add the mustard, half the parsley, chili pepper flakes, & when it starts to boil, & the water or stock.
Step #4 Cook for about 3 mins, then add the lemon juice, feta cheese, & the rest of the parsley.
Step #5 Do not stir (cause of the cheese), but shake the pan to distribute the ingredients evenly.
Step #6 Remove from the heat & add salt & pepper to taste.
Step #7 Serve.
Step #8 It can also be put in the fridged for 2 to 3 days.
