Penne With Tomato-cream Sauce Recipe

Ingredients
  • 1/2-1 tsp red chili pepper flakes .
  • 5 tbsps olive oil .
  • 2 tbsps grain alcohol or vodka .
  • 2 medium garlic cloves .
  • 450 g dry penne pasta .
  • 2 (28 oz) cans whole tomatoes .
  • salt & pepper .
  • 15 sprigs parsley (Leaves only) .
  • 1 c heavy cream

Directions
  • Step #1 Roughly chop garlic.
  • Step #2 Heat the oil in a medium-sized saucepan over med-heat/flame.
  • Step #3 When the oil is warm add the garlic & sauté for 3 mins or until golden along the edges.
  • Step #4 Add the canned tomatoes to a saucepot & cook for 20 mins.
  • Step #5 Add salt & pepper taste, & then add the chili flakes.
  • Step #6 Pass the sauce mix through a food mill or process until smooth & pour this into a large skillet.
  • Step #7 Reduce heat to low & let the sauce simmer.
  • Step #8 Meanwhile bring a pot of water to boil for the Penne.
  • Step #9 While the pasta is cooking coarsely chop the parsley & set aside.
  • Step #10 Drain the pasta when it is al dente & pour it into the skillet with the tomato sauce.
  • Step #11 Add the vodka & mix very well.
  • Step #12 Increase the heat to medium & sauté for 1 min.
  • Step #13 Add the cream & mix until the evenly spread.
  • Step #14 Pour into a nice serving dish & garnish with the sliced parsley.
  • Step #15 Serve hot.
