Chocolate Chip Meringue Drops Recipe

Ingredients
  • 1/2 c semisweet chocolate chips
  • 2 egg whites
  • 1/2 c white sugar
  • 3 tbsps unsweetened cocoa powder
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 250 degrees F (120 degrees C).
  • Step #2 Line 2 baking sheets with aluminum foil or parchment paper, & set aside.
  • Step #3 In large metal or glass bowl, beat the egg whites on high speed with an electric mixer until soft peaks form.
  • Step #4 Gradually add sugar while continuing to beat until they hold stiff peaks.
  • Step #5 Mix in the vanilla & cocoa on lowish speed, then fold in chocolate chips by hand.
  • Step #6 Drop small mounds of the mixture onto the prepared baking sheets, spacing 1 inch apart.
  • Step #7 Bake for 1 hr in the preheated oven.
  • Step #8 Turn off oven, & leave the cookies in the oven for 2 more hrs, or until centers are dry.
  • Step #9 Remove from pan & store this in an airtight container.
