Curried Couscous With Dried Cranberries Recipe

Ingredients
  • 1/2 orange, juice of .
  • 3/4 c dried sweetened cranberries .
  • 1 tsp sugar .
  • 1/2 lemon, juice of .
  • 1 tbsp curry powder .
  • 3/4 c sliced walnuts, toasted .
  • 2-3 tbsps extra-virgin olive oil .
  • fresh ground pepper .
  • 1 tsp salt .
  • 1 (5 7/8 oz) box instant couscous .
  • 2 tbsps sliced fresh Italian parsley .
  • 3-4 scallions, trimmed & thinly sliced on an angle

Directions
  • Step #1 Stir the couscous, cranberries, curry powder, salt, & sugar together in a heatproof bowl.
  • Step #2 Bring water (amount will be listed on package directions) to a boil & pour it over the couscous.
  • Step #3 Add the orange juice.
  • Step #4 Give it a big stir, cover the bowl tightly & let it stand, until the water is absorbed & the couscous is tender, giving it a big stir once or twice, about 5 mins.
  • Step #5 Fluff up the couscous with a fork.
  • Step #6 Add the olive oil, parsley, lemon juice, scallions, & walnuts.
  • Step #7 Stir around until everything is distributed evenly throughout the couscous.
  • Step #8 Make up to 2 hrs ahead of time & keep at about room temp until you're ready to serve.
  • Step #9 Check the seasonings just before you serve the salad & add salt & pepper, to taste.
  • Step #10 Note: To toast the walnuts, spread them out on a baking sheet & bake in a 400F degree F oven until they turn a shade darker, about 8 mins.
