Snickerdoodle Mini Muffins Recipe

Ingredients
  • 1 tsp ground cinnamon .
  • 1/2 c granulated sugar .
  • 4 tbsps margarine or butter, melted .
  • 1 1/2 c all-purpose flour .
  • 1 tbsp baking powder .
  • Topping .
  • 1 c milk .
  • 1 tsp vanilla .
  • 1 c quick-cooking oats or old fashioned oats, uncooked .
  • 1/3 c granulated sugar .
  • 1 egg, lightly beaten .
  • Muffin

Directions
  • Step #1 Heat oven to 400°F Spray bottoms only of mini muffin pan c with cooking spray.
  • Step #2 For topping, mix sugar & cinnamon in small bowl; mix well & set aside.
  • Step #3 For muffins, oats, mix flour, sugar & baking powder in large bowl; mix well.
  • Step #4 In small bowl, egg, mix milk, margarine & vanilla; mix well.
  • Step #5 Add to dry ingredients all at once; stir just until dry ingredients are moistened.
  • Step #6 (Do not overmix.
  • Step #7 ) Fill muffin c two-thirds full.
  • Step #8 Sprinkle top topping evenly over tops of muffins.
  • Step #9 Bake 12 to 14 mins or until light golden brown.
  • Step #10 Cool muffins in pan on wire rack 5 mins; remove this from pan.
  • Step #11 Serve warm.
  • Step #12 Note: To prepare regular-size muffins, line 12 medium muffin pan c with paper baking c or spray bottoms only with cooking spray.
  • Step #13 Prepare muffin batter as directed above.
  • Step #14 Fill muffin c almost full.
  • Step #15 Sprinkle top with topping.
  • Step #16 Bake 18 to 22 mins or until light golden brown.
  • Step #17 Cool muffins in pan on wire rack 5 mins; remove this from pan.
  • Step #18 Serve warm.
