Chicken Salad With Fruit Recipe

Ingredients
  • 1 1/2 c sliced cooked chicken .
  • 1 1/2 c red grapes or green grapes (seedless & halved) .
  • 4 lettuce leaves .
  • 1/2 c dried apricots, cut into slivers .
  • 2 plum tomatoes, thinly sliced .
  • 1/2 c nonfat sour cream .
  • 2 tbsps frozen orange juice concentrate, thawed .
  • salt & pepper .
  • 3 green onions, sliced (1/3 c) .
  • 1/2 c fat-free mayonnaise .
  • 1/4 tsp ground ginger .
  • 1 cucumber, thinly sliced .
  • 2 c celery, thinly sliced

Directions
  • Step #1 For dressing, whisk together first 4 ingredients.
  • Step #2 Stir in green onions & set aside.
  • Step #3 In a large bowl, grapes, chicken, toss celery, & apricots.
  • Step #4 Stir in the dressing.
  • Step #5 Cover up & chill 2-4 hrs.
  • Step #6 Taste & add salt & pepper if you like.
  • Step #7 To serve, line 4 salad plates with lettuce leaves.
  • Step #8 Arrange tomato & cucumber slices around.
  • Step #9 Top lettuce leaves with chicken mixture.
