Oatmeal Chocolate Chip Muffins With Chocolate Streusel Recipe

Ingredients
  • 1/2 c honey .
  • 2/3 c low-fat buttermilk .
  • 1/2 c semi-sweet chocolate chips .
  • 1/2 tsp salt (optional) .
  • 1 c quick-cooking oats or old fashioned oats, uncooked .
  • 2 tbsps baking cocoa .
  • 1 1/4 c all-purpose flour .
  • 1 tsp baking powder .
  • 1/2 tsp baking soda .
  • 1 egg, lightly beaten .
  • Streusel .
  • 1/4 c all-purpose flour .
  • Muffins .
  • 1/3 c granulated sugar .
  • 2 tbsps margarine or butter, melted .
  • 1/4 c vegetable oil

Directions
  • Step #1 Heat oven to 350ºF.
  • Step #2 Line twelve medium muffin c with paper baking c or spray bottoms only with cooking spray.
  • Step #3 For streusel, mix all ingredients in medium bowl; mix well.
  • Step #4 Set aside.
  • Step #5 For muffins, baking powder, chocolate chips, mix flour, oats, baking soda & salt in large bowl; mix well.
  • Step #6 In medium bowl, mix buttermilk, honey, oil & egg; mix well.
  • Step #7 Add to dry ingredients all at once; stir just until dry ingredients are moistened.
  • Step #8 (Do not overmix.
  • Step #9 ).
  • Step #10 Fill muffin c almost full.
  • Step #11 Sprinkle top with reserved streusel, patting carefully.
  • Step #12 Bake 20 to 22 mins or until light golden brown.
  • Step #13 Cool muffins in pan on wire rack 5 mins.
  • Step #14 Remove from pan.
  • Step #15 Serve warm.
