Strawberry Cream Sponge Recipe

Ingredients
  • 150 g caster sugar .
  • 75 g plain flour, sifted .
  • 1 tbsp oil .
  • 225 g strawberries, sliced .
  • icing sugar, to dust .
  • 150 ml double cream, whipped .
  • 3 medium eggs

Directions
  • Step #1 Preheat oven 190c.
  • Step #2 Grease a deep 20cm cake tin, line with paper on base.
  • Step #3 Place the eggs & sugar in a bowl & whisk until thick & holds its shape when tipped.
  • Step #4 Fold in the flour.
  • Step #5 Turn out into the tin & level.
  • Step #6 Bake 20-25 mins until cake springs back when lightly pressed in the centre.
  • Step #7 Turn out on to wire rack, peel off lining cool.
  • Step #8 Freeze without filling (see above).
