Easy English Scones Recipe

Ingredients
  • 1/2 c sweetened flaked coconut .
  • 2 c sifted all-purpose flour (256gm) .
  • 1/2 tsp baking soda .
  • 1/2 c white sugar .
  • 2 1/2 tsps baking powder .
  • 1/2 tsp salt (3ml) .
  • 1 c milk .
  • 1/4 c margarine or butter (I use 5 tbsp on a butter stick) .
  • 3/4 c sultana raisins (in a pinch regular raisins will do fine)

Directions
  • Step #1 Preheat oven to 425°F or 220°C & grease baking tray with margarine ready.
  • Step #2 Sift the flour, baking powder, sugar, baking soda & salt together.
  • Step #3 Cut in the margarine or butter till mixture resembles very fine breadcrumbs, then stir in the the raisins & coconut.
  • Step #4 Add the milk & mix to make a smooth dough.
  • Step #5 (Adding a little more milk if necessary.
  • Step #6 The mix should not be too dry).
  • Step #7 Knead very lightly for ten seconds on a lightly floured surface.
  • Step #8 Roll or pat to about 3/4" thick (2 cm) & either cut into individual scones.
  • Step #9 Bake for approximately 12 mins (makes about 18 scones).
