Crock Pot Gumbo Recipe

Ingredients
  • file powder .
  • 3 stalks celery (sliced) .
  • pepper .
  • 1/2 c flour .
  • 1 lb boneless chicken breasts .
  • 1 lb andouille sausages (or skinless smoked) .
  • 1 green pepper (sliced) .
  • 1 tbsp cajun seasoning .
  • 1 dash Tabasco sauce .
  • 1 lb shrimp (raw, peeled) .
  • salt .
  • 1 onion (sliced) .
  • 1/2 lb bacon .
  • 3 garlic cloves (minced)

Directions
  • Step #1 Roux:.
  • Step #2 Fry bacon & set aside on paper towels.
  • Step #3 Reserve 6 tbs.
  • Step #4 bacon grease.
  • Step #5 In a skillet on low heat, add 4 tbs.
  • Step #6 of bacon grease, flour & cajun seasoning.
  • Step #7 Brown flour slowly, stirring constantly, until dark copper brown.
  • Step #8 Be careful not to burn flour.
  • Step #9 Gumbo:.
  • Step #10 Transfer roux to crock pot.
  • Step #11 Lightly saute garlic, onion, celery & green pepper in 2 tbs.
  • Step #12 of bacon grease & add to crock pot.
  • Step #13 Crumble bacon & add to crock pot.
  • Step #14 Brown chicken, cube & add to crock pot.
  • Step #15 Slice sausage & add to crock pot.
  • Step #16 Add 8 c of hot water to crock pot & stir until water & roux are mixed.
  • Step #17 Cook on low heat for 6-8 hrs.
  • Step #18 Just before serving add shrimp to crock pot & cook this until shrimp turn pink.
  • Step #19 Serve over cooked rice & sprinkle lightly with file powder.
